Ingredients Kg
Zeelandia superior brown bread mix 12.5 kg
Yeast (wet) or 190 grams dry yeast 0.565 kg
Water 7.25 kg
Fat 0.3 kg

 

Method

Mix all ingredients to a well developed dough – mix for 2 minutes on slow and 4 minutes fast speed

Scale 780g for a standard bread and 450g for a mini loaf

Proof for 60 minutes

Bake at 220°C for 10 seconds with steam and closed damper

Bake for 22 minutes open damper for the last 10 minutes
