Ingredients Kg
Zeelandia Sweet dough mix 12.5 kg
Yeast (wet) or 120 grams dry yeast 0.375 kg
Water 6.1 kg

 

 

Method

Mix all ingredients to a well developed dough – mix for 2 minutes on slow and 4 minutes fast speed

Scale 2.100g dough per head or 70g per roll

Pack on pans and put in proofer for 45 minutes

After proving spray with water

Put 40g of grated cheese on each roll

Bake at 220°C with 10 seconds steam and close damper

Baking time 12 minutes and open damper in the last 8 minutes
