Madeira loaf
Ingredients Kg
Madeira & Banana loaf mix 12.5 kg
Eggs 1.25 kg
Margarine 1.56 kg
Milk 0.81 kg

 

 

Method

Mix the margarine on medium speed for 5 minutes with a flat beater

Add the eggs to the margarine then add the madeira premix

Mix for 4 minutes on medium speed

Add the milk on slow speed until smooth batter

Scale 450 g per loaf

Make an indent with a scraper that was dipped into oil

Make a slit in the centre of the cake before baking

Bake at 180 degrees for 35 minutes with an open  damper

Take out of oven and let it cool down
