Ingredients Kg
Sweet dough mix 12.5 kg
Yeast 0.5 kg
Bakers fat 0.3 kg
Water 6.75 kg

Method

Mix all ingredients to a well developed dough

Mix for 2 minutes on slow and 4 minutes fast speed

Scale dough at 60 grams or 1.8 kg per head

Prepare pans and pack on pans

(Brush buns with water and decorated with poppy seeds before prooving)

Proof for 60 minutes

Bake at 220 degrees for 8 minutes with open damper
