100% Rye bread recipe
Ingredients Kg
Complete 100% Rye mix 12.5 kg
Yeast 0.625 kg
Water 6.000 kg

 

Method

Mix all ingredients to a well developed dough

mix for 2 minutes on slow and 4 minutes fast speed

Rest dough for 5 minutes before scaling

Scale dough at 1.1 kg

Mould dough and press into bread tin or rye baskets

Dust with rye flour

Score with knife diagonal cuts across top of loaf

Proof for 45 minutes

Baking temperature 220 degrees with 10 seconds steam

Baking time 25 minutes

Open damper on last 15 minutes of baking and turn down the temperature to 200 degrees
